JOVEN (YOUNG)
PRODUCTION:
On 22 September 2009 the grapes used in this wine were harvested, had their stalks removed and were placed in the vat. After a few days fermentation began and was maintained at a steady 20ºC. Over the following 20 days natural maceration was allowed to take place. When the first cold spell of the autumn arrived, the temperature reached a level that favoured a good rhythm of fermentation. Finally, the paste was pressed to 50% using a technique of semi-automatic pressing in order to extract the wine. The wine was returned to the vat, where it continued the process of malolactic fermentation until it was bottled.
VARIETY:
This young red wine was made from 100% Tempranillo grapes, harvested in the county of Baix Penedès and typical to the region.

TASTING NOTE
This wine has a lively, intense, passionate red colour with a deep, substantial structure. Its flavour reminds us of red fruits such as strawberries and cherries, while in the mouth its delicate tannins follow an unctuous, highly palatable expressiveness.
This is a wine that leaves its mark on the mind and revolutionises the senses.
DATA FROM THE FARM
The grapes that went into this wine were harvested in an area called Els Estremòls, which is located near the village of Les Masies del Torrent in the Les Peces district in the county of Baix Penedès. The zone is around 125 metres above sea level and has a slight slope of 3%. The vines were planted on 15 May 2001 in a gravelly soil that receives approximately 340 l/m2 of rainfall. The vine stock has a planting distance of 2.1 m x 1.1 m, and the land is cultivated in accordance with an innovative application of purely biodynamic principles.
